Ingredients
- shrimp (peeled, deveined) — 250 g
- soft tofu — 300 g, cut into 2 cm cubes
- ginger — 15 g, minced
- chicken stock — 300 ml
- light soy sauce — 1 tbsp
- sesame oil — 1 tsp
- cornstarch — 1 tsp mixed with 2 tbsp water
- cooking oil — 1 tbsp
- scallions — 1 stalk, chopped
Steps (beginner-friendly)
- Pat shrimp dry. Heat oil in a clay pot or deep pan over medium heat, add minced ginger, and stir 20 seconds until fragrant.
- Add shrimp and stir-fry 1-2 minutes until they curl and turn pink-orange. Remove and set aside.
Tip: Shrimp and tofu together deliver 25 g+ of easily digested protein — excellent for wound healing and lactation. Ginger keeps the dish warming, per confinement tradition.
