Ingredients
- dried noodles — 300 g
- scallions — 5 stalks, cut into 5 cm segments
- garlic — 3 cloves, smashed
- soy sauce — 2 tbsp
- dark soy sauce — 1/2 tbsp
- sugar — 1 tsp
- cooking oil — 4 tbsp
Steps (beginner-friendly)
- Start a pot of water boiling for the noodles.
- Meanwhile, heat 4 tbsp oil in a small saucepan over LOW heat. Add the scallion segments and smashed garlic.
- Fry slowly for 6-8 minutes, stirring occasionally, until the scallions turn deep golden and crisp and smell nutty. Do not rush with high heat — they'll burn.
- Turn off the heat and carefully stir in 2 tbsp soy sauce, 1/2 tbsp dark soy, and 1 tsp sugar (it will sizzle). Set aside.
- Cook the noodles in the boiling water for 3-4 minutes until just tender; drain well.
- Pour the scallion oil sauce over the hot noodles (or return the noodles to the pan and toss).
- Toss with tongs until every strand is glossy and brown, top with the crispy fried scallions, and serve.
Tip: Low-and-slow frying of scallions gives the oil its deep aroma.
