Ingredients
- tomatoes — 2 medium, cut into chunks
- soft tofu — 300 g, cubed
- scallions — 1 stalk, chopped
- cooking oil — 1 tbsp
- salt — 1 tsp
- sugar — 1/2 tsp
- white pepper — 1/4 tsp
- sesame oil — 1/2 tsp
Steps (beginner-friendly)
- Cut the tomatoes into 3 cm chunks and the tofu into 2 cm cubes.
- Heat 1 tbsp oil in a pot over medium heat. Add tomatoes and cook 3-4 minutes, pressing with a spatula, until they collapse into a saucy pulp.
- Pour in 3 cups of water and bring to a boil over high heat.
- Add the tofu cubes gently, return to a boil, then lower to a gentle simmer for 5 minutes.
- Season with 1 tsp salt, 1/2 tsp sugar, and 1/4 tsp white pepper; stir gently so the tofu doesn't break.
- Ladle into bowls, drizzle each with 1/2 tsp sesame oil, and top with chopped scallions.
Tip: A pinch of sugar rounds out the tomato tang nicely.
