Ingredients
- fresh lo mein noodles — 350 g
- shrimp — 200 g, peeled and deveined
- bell pepper — 1, sliced thin
- scallions — 2 stalks, cut into sections
- soy sauce — 1.5 tbsp
- oyster sauce — 1.5 tbsp
- sesame oil — 1 tsp
- white pepper — 1/4 tsp
- cooking oil — 1.5 tbsp
Steps (beginner-friendly)
- Boil the noodles for 2-3 minutes until just tender, drain, and set aside.
- Mix 1.5 tbsp soy sauce, 1.5 tbsp oyster sauce, and white pepper in a small bowl.
- Heat 1.5 tbsp oil in a wok over high heat. Stir-fry the shrimp 1-2 minutes until pink and opaque, then remove to a plate.
- Add the bell pepper slices and stir-fry 1 minute until slightly softened but still crunchy.
- Lower the heat to medium, add the noodles and the sauce, and toss with tongs for 1-2 minutes until every strand is coated.
- Return the shrimp, toss 30 seconds to heat through.
- Turn off the heat, add scallions and sesame oil, toss once, and serve.
Tip: Toss noodles in the sauce off high heat briefly to absorb flavor.
