Ingredients
- boneless chicken thighs — 350 g, cut into bite-size pieces
- dried shiitake mushrooms — 5 pieces, soaked and sliced
- fresh ginger — 20 g, julienned
- light soy sauce — 1.5 tbsp
- sesame oil — 1 tsp
- cornstarch — 1 tsp
- sugar — 1/4 tsp
- goji berries — 1 tsp (optional)
Steps (beginner-friendly)
- Soak dried shiitake in warm water 10 minutes until soft, then slice and keep the soaking water.
- Marinate chicken pieces with soy sauce, sesame oil, cornstarch, sugar, and half the ginger for 5 minutes.
Tip: Steaming keeps nutrients in the dish instead of the water, making it ideal gentle confinement food — high in protein for tissue repair and milk production.
