Ingredients
- shrimp — 400 g, peeled and deveined
- garlic — 5 cloves, minced
- red chili — 1, sliced (or 1/2 tsp chili flakes)
- cooking oil — 1.5 tbsp
- soy sauce — 1 tbsp
- salt — 1/4 tsp
- scallions — 1 stalk, chopped
Steps (beginner-friendly)
- Pat the shrimp completely dry with paper towels; dry shrimp sear instead of steam.
- Heat the oil in a frying pan over medium-high heat until it shimmers.
- Add garlic and chili, stir 20 seconds until fragrant but not browned.
- Add the shrimp in a single layer and cook 1.5 minutes without stirring.
- Flip the shrimp and cook another 1-1.5 minutes until they turn fully pink and curl into a C shape.
- Add soy sauce and salt, toss 30 seconds so every shrimp is coated.
- Sprinkle scallions and serve immediately.
Tip: Shrimp are done the moment they curl into a loose C; a tight O means overcooked.
