Ingredients
- chicken breast — 300 g, sliced
- button mushrooms — 250 g, quartered
- garlic — 2 cloves, minced
- oyster sauce — 1.5 tbsp
- soy sauce — 1 tbsp
- cornstarch — 1 tbsp
- cooking oil — 1.5 tbsp
- black pepper — 1/4 tsp
Steps (beginner-friendly)
- Slice the chicken thin and marinate with 1 tbsp soy sauce and the cornstarch for 10 minutes.
- Heat 1 tbsp oil over high heat and stir-fry the chicken 3 minutes until white with no pink; remove.
- Add the remaining oil, then garlic; stir 15 seconds until fragrant.
- Add mushrooms and stir-fry 3-4 minutes until they release liquid and it mostly evaporates, turning golden brown.
- Return the chicken, add oyster sauce, remaining soy sauce, and pepper.
- Toss 1 minute until everything is coated and glossy.
- Serve hot.
Tip: Don't crowd or stir the mushrooms too early; letting them sit browns them and builds flavor.
