Ingredients
- ground chicken — 400 g
- lettuce (iceberg or butter) — 1 head, separated into cups
- water chestnuts — 1/2 cup, diced (optional)
- garlic — 3 cloves, minced
- ginger — 1 tbsp, minced
- soy sauce — 1.5 tbsp
- oyster sauce — 1 tbsp
- sesame oil — 1 tsp
- cooking wine — 1 tbsp
- cooking oil — 1.5 tbsp
Steps (beginner-friendly)
- Separate the lettuce into whole cup-shaped leaves, rinse, and pat dry. Arrange on a plate.
- Heat 1.5 tbsp oil in a frying pan over medium-high heat. Add garlic and ginger and stir 20 seconds until fragrant.
- Add the ground chicken and stir, breaking it into small crumbles, 3-4 minutes until no pink remains.
- Add 1 tbsp cooking wine and cook 30 seconds until the sizzling smell of alcohol fades.
- Add 1.5 tbsp soy sauce, 1 tbsp oyster sauce, and the diced water chestnuts. Cook 2 minutes, stirring.
- Check the texture: the filling should be slightly saucy and glossy, not dry — if dry, add 1-2 tbsp water.
- Turn off the heat, drizzle with sesame oil, and spoon the hot filling into lettuce cups. Wrap and eat with your hands.
Tip: Keep the filling slightly saucy so the lettuce cups don't taste dry.
