Ingredients
- dried snow fungus (tremella) — 1 whole piece (about 15 g)
- Asian pear — 2, peeled, cored and chunked
- rock sugar — 2 tbsp, or to taste
- goji berries — 1 tbsp
- water — 6 cups (1.5 L)
Steps (beginner-friendly)
- Soak the dried snow fungus in warm water for 15 minutes until it puffs up, then trim off the hard yellow base and tear the white part into small florets.
- Bring the water to a boil with the fungus, then simmer covered for 15 minutes — this is when it starts turning silky.
Tip: The longer it simmers, the more gelatinous the fungus becomes — that silky texture is the whole point of this classic sweet soup.
Tradition note: In Chinese food tradition, snow fungus and pear are considered 'moistening' (润燥) ingredients — families often simmer this soup in dry autumn and winter months.
