Ingredients
- pork ribs — 400 g, chopped into sections
- chinese yam (nagaimo) — 300 g, peeled and rolled-cut
- ginger — 4 slices
- goji berries — 1 tbsp
- cooking wine — 1 tbsp
- salt — 1 tsp, to taste
- scallions — 2 stalks, chopped
Steps (beginner-friendly)
- Blanch the ribs: cover with cold water, add 1 tbsp cooking wine and 2 ginger slices, boil 3 minutes, then drain and rinse off the foam.
- Put the clean ribs in a fresh pot with 8 cups of water and the remaining ginger. Bring to a boil, then simmer covered for 15 minutes.
Tip: Starting the ribs from cold water and blanching first is the classic Chinese trick for a clear, clean-tasting broth.
Tradition note: Chinese yam soup is an everyday nourishing classic (滋补) in northern Chinese home cooking, most often simmered in fall and winter.
